I have always been a hot cereal kind of girl. I remember being about 4 or 5 years old and wanting my mom to make this hot cereal called "Maypo" which is just instant hot cereal mixed with maple syrup. Though I love hot cereal I have become quite particular in the type of grain I use. A real snob actually. Haha. Right now I am into using Redmill's Gluten Free Quick Oats. I have tried all kinds. Quaker, Trader Joes, you name it. Redmill is the sweetest or at least responds well to the pinch of salt I add to the pot. One thing I accidently learned when I moved out on my own was that if I put the oats in with the water initially before it boils, it creates a nice creamy texture. The magic is just starch. It keeps it from being stiff and hard.
For a while, I used to eat quick oats every day and soon grew to kinda get bored with it. I went back to eating, I don't know... cold cereal? Which is usually full of sugar and unknown ingredients. So I started up eating oatmeal again and tried to make it a little more random and enjoyable. Right now I use 4 different types of items in my oatmeal along with a little honey to sweeten it up. What I put in with the oatmeal depends on the week and what I am able to get at the market. In the photo above I forgot to include dried fruit. Didn't realize it till after I finished my bowl!
- berries - blueberry, blackberry, strawberry, raspberry
- seeds - pumpkin, sesame, chia, ground flax
- nuts - walnuts, almonds
- dried fruit - raisins, craisins (hard to find unsweetened), dates
And so there you have it. A bunch of good things for you in a bowl. I like to use berries because of the antioxidants. Seeds and nuts are good fuel for the body which is hard to find in other dishes we eat throughout the day. Oh, and most of the time I put chia seeds and flax in some plain greek yogurt because I can't eat the yogurt alone. I eat it to keep the good bacteria in my gut going strong. :) You can use either a soy or coconut yogurt as a vegan alternative.
Here is a photo of the oatmeal and goodies all mixed together with some soy milk. You can use any milk of your choice. It is crazy how many kinds are out there right now! Soy, almond, hemp, coconut, cashew, cow (of course), rice and what else did I miss? Soy is my favorite still. I tried the Silk cashew flavor once and it was gross to me. Haha.
